Maple Apple Chicken or Pork

  • 2-3lbs of boneless pork chops, sirloin or chicken breasts.
  • Cut into 3″ x 3″ pieces or any size you like.
  • Pound to 1/2″ thick, toss in a zip lock bag.
  • Add 1/2 cup of apple sauce, 1/4 cup of Maine Mountain Maple syrup, 4 oz of apple schnapps, or cooking wine.
  • Marinate overnight.
  • Grill and serve with home made potato salad or fresh french fries!

Maple Shrimp and Scallops

  • 3-4lbs of either shellfish, medium size shrimp or bay scallops (2″) or larger will work,
  • Prepare 1/4 lb of smoked bacon, cooked 1/3 done to remove some fat.
  • Place shrimp and scallops in a zip lock bag with 1/4 cup of Maine Mountain Maple Syrup, dash of garlic, 2oz of lemon, dash of pepper.
  • Marinate for 3-4 hrs or overnight in the refrigerator.
  • Remove scallops and wrap with  half strips of bacon around each held with a tooth pick.
  • Stab 6-7 scallops with a skewer.
  • For the shrimp fold a peace of bacon between each piece of shrimp as you add it to the skewer. You can also add slices of red bell pepper, or mushrooms, or onion.
  • Either of these shell fish will cook quickly on low heat, baste additional maple syrup for added flavor.
  • Serve with white or brown rice or rice pilaf and fried breaded (corn meal) summer squash.

Maple Teriyaki Chicken or Sirloin Beef Tips

  • 2lbs +/- Boneless breast of chicken or beef cut into 2″ x 4″ strips
  • Pound or cut 1/2″ thick, toss in a zip lock bag.
  • Add 1/3 cup of Maine Mountain Maple Syrup, 1/2 teaspoon of ground ginger, 1/4 tea spoon of cloves, dash of garlic powder and shake.
  • Season 4-6 hours or overnight.
  • Stab chicken with skewers and grill until done.
  • Serve with white or fried rice and crisp egg rolls.
